I've been following a vegetarian diet for some time and incorporating all those animal options will not be an option for me, is this okay?

There are a lot of students who follow vegan or vegetarian diets and manage to improve their deficiencies while avoiding animal products! The foods listed in the manual aren't the only foods you have to eats, in fact there are many more you can find. The manual is just to give some examples to start you off! Also, if you can't squeeze in a third meal to your day, perhaps try and incorporate some healthy snacks to eat throughout the day.
