How is aloe vera different from using it alone on our scalp and hair than using it as an ingredient?

Humectants like aloe vera have the 'drying' or 'over-humidifying' effect whether they are used alone or in a product blend. Of course, the intensity of the effect will depend on the proportion of humectant in the product. However, it is mostly important to consider that when it's a humectant we'll leave it to sit on the hair for a long time. Using aloe vera as a mask before shampoo and the rest of the routine should not cause any issues like that.
