I made the chamomile extract as per the instructions but 500 ml of water to 100g of chamomile flowers it seems to be just to little. I'm afraid the flowers will absorb all the water. Am I doing something wrong?

For that recipe, it's important to remember that this is an 'extract'. Meaning that you have to press the water out of the flowers after the soaking to get the precious chamomile extract. So even if the flowers absorbed most of the water, it doesn’t meant that you won’t get a super good extract in the end after pressing it all through a filter.
However, if you see that you really get too little water out of your flowers after the soaking, you can definitely try adding an extra 100ml of warm water at the beginning. Your extract may be a bit more diluted but it won’t create any harm to the formulation.
